One of Maya Angelou's famous quotes states:
"I've learned that, people will forget what you've said, people will forget what you did, but people will never forget how you made them feel."
Just this once, I'll have to disagree with Dr. Angelou because ... I will never forget how my cousin Elizabeth called me one night as we were preparing for our daughter's wedding. She said "Monee I want to cater Brandy's wedding and I have an idea of what we can serve."
Then I'll never forget what Beezie "did"... She catered the most amazing meal for Brandy & Paul's wedding. The food was absolutely delicious, plentiful and beautifully displayed for our family and friends. There were so many people who went back for a second and even third serving. How often do you see that happen at a wedding? And believe it or not, the star dish of the meal was a beautiful, silky, split-pea soup that had our guests begging for more.
Lastly, people left our daughter and son-in-law's wedding feeling good after dining on such a sumptuous meal. Three years later, I still have family and friends complimenting my beloved cousin on an amazing meal. So yes, it's possible to remember vividly what people "said" to you, and also remember what people "did" that moved you so profoundly that you'll never forget their love, generosity and how they "made you feel".

I’m always on the lookout for dishes that deliver taste and excitement. Recently, I had the chance to dive into some amazing Haitian Jamaican cuisine, and let me tell you—it was a total flavor explosion!
First, let’s talk about the Black Rice. The moment I took a whiff, I was hooked. The aroma was so inviting, with hints of garlic and spices wafting through the air. When I actually tasted it, I was blown away! The rice was perfectly cooked—nutty and slightly chewy, just like I love it. It felt like a warm hug in a bowl, comforting and full of flavor. I could easily eat this every day!
Let's move on to the Crab Mac and Cheese—and let me tell you, this dish was next-level. The second I dug in, the creamy cheese enveloped me in a dreamy indulgence. But the real deal? That fresh crab! It added this wonderful sweetness that took the whole dish to new heights. It was rich, delicious, and totally the ultimate comfort food.
And last but certainly not least was the Crab Boil. The aroma hit me like a wave—zesty, garlicky goodness that made my mouth water. The crab legs were sweet and juicy, and the potatoes and corn just soaked up all those rich flavors. Eating this was such a fun experience, and it felt like a celebration every time I cracked open a crab leg. You just can’t beat that feeling! It’s the kind of dish that makes you want to gather around the table with friends and family, cracking open crabs and sharing stories.
If you're looking for an unforgettable feast that will awaken your taste buds, I highly recommend trying out these amazing Haitian Jamaican dishes. Overall, this was a remarkable journey through some seriously mouthwatering flavors. Each dish brought its own unique flair, showcasing the vibrant culinary heritage, a true testament to the unforgettable flavors of the Caribbean. There is nothing like finding the right person at the right time...and so it was with JOY finding a caterer who provided with Absolute Satisfaction, and who assisted me in planning a Menu.
Planning my Mother's Repass earlier this year, I was without a doubt that my Caterer would be none other than Elizabeth. Bein Caribbean, my choice of food for the occasion would be Caribbean/American. Elizabeth provided a Menu for me to choose.

My crab fest experiences have been nothing but top tier. I loved that the many dishes were not typical dishes you find at these events. Being able to enjoy so many different flavors coupled with crab has been wonderful. The music, people, and Caribbean vibe are experiences every one should have. Highly recommend.
